Happy Monday!

My oh my have I been busy. Work has been a rollercoaster of exciting times, and I was fortunate enough to take some time off with the fiancé to visit his family (and breweries) in Asheville last week.

red and blue eggs
I honestly cannot remember the last time I had 4 consecutive days devoted to everything but work. As a southern belle from North Carolina, it was my duty to throw together a patriotic dish for the family cookout. Check out these deviled eggs!

Without altering my mother’s prized recipe, I soaked the peeled, boiled eggs in water and food coloring for ~5 hours. I then sliced them and continued the recipe as normal. They were a hit!

Between brewery tours, visiting with family, hiking, exploring the Blue Ridge parkway, and some bargain shopping at the Banana Republic Factory store, we had a jam packed but restful stay with the future in-laws.

When we returned to Raleigh on Monday the 4th, we weren’t finished celebrating America’s Birthday. After doing extensive research, we decided to go with the fireworks show downtown at Red Hat Amphitheater. But first, dinner. As always, Bad Daddy’s burger bar did not disappoint! Grade A service, delicious food, and $3.oo pints of Hell or High Watermelon. We finished up, parked for free at my office downtown, and walked to Red Hat.

downtown AshevilleEntry was free! We enjoyed an amazing show of Fireworks and live music. Anyone looking for an inexpensive and impressive show for arguably the best Holiday of the year, head on over next year. If you’d like to see a video of the fireworks finale, check out my video on Instagram HERE.

Tuesday morning at work was a little rough, but totally worth it. How did you spend your 4th of July Holiday? Share in the comments!

Later y’all!
