Normally, I am starving by the time I get home from work. My dinners consist of protein, veggies, the whole shebang – I am not the one to have a salad, soup, etc etc at dinner.

Yesterday was different. At my work, we were treated with a buffet of (my favorite) The Pitt BBQ, so my not so little lunch turned into a feast.

It was delicious.

This left me not so hungry for dinner, so after digging through my kitchen I decided to experiment on a Grilled Chicken Flatbread.



1 Flatbread (a pack of 6 personal sized FBs at FoodLion was 1.99)

2- 3ish oz of Grilled Chicken – When I don’t feel like cooking chicken, I always have Tyson’s frozen grilled chicken strips on hand. You can get a 22oz bag at Harris Teeter for 7.99.

Sprinkle of Feta Cheese – I got mine from Trader Joe’s and can’t determine the exact price, but it was under $3.oo

Sprinkle of Parmesan Cheese – 1.59 for 3 oz at Harris Teeter

3 Basil Leaves – I picked from my Garden

Italian Seasonings – McCormick’s Italian Seasoning Grinder from Harris Teeter $2.99 (Currently on sale! $2.29)

EVOO – I always, ALWAYS have this on hand, but it’s $3.47 for 17oz at Harris Teeter

This may seem like a lot of ingredients, but I love this recipe because many of these ingredients are on hand in my kitchen, and generally last quite some time. Also, look for coupons! Anything under .99$ at Harris Teeter is doubled, so it’s TOTALLY worth checking before grocery shopping.


Preheat your oven to 375. Drizzle a little EVOO on a flatbread, and bake for 4-5 minutes, or until soft.

Place 3-5 pieces of grilled chicken either in a microwave bowl or in a pan on your stovetop. The chicken is pre cooked, so heat until warm throughout the pieces. I like bite sized pieces of chicken on my flatbread, so cut your pieces accordingly.

Add your chicken to your flatbread, and sprinkle with feta, parmesan, Italian seasonings, and a dash of EVOO. Add basil leaves.

Bake for 5 minutes. Enjoy the amazing aroma coming from your oven, and if you’ve had a particularly long day pour yourself a glass of wine.



Total Cost for 1 Flatbread – around $1.40, depending on how much cheese you like 🙂
